The short version

How to eat Peking Duck in Beijing in 2026: one roast bird carved at the table, pancake, sweet bean sauce, and the hung-oven and closed-oven craft behind it.

Yes. Peking Duck is a sit-down in Beijing: one roast bird, carved at the table, pancake, sweet bean sauce, scallion or cucumber. That is the craft. A locked van that sells "Beijing food" as a timed photo and a hard sell is a different SKU.

This page is how an independent traveler sits for the bird in 2026 — Independent or Private Guided — without buying a group food tour.

The bird is a national craft, not a food-tour stop

The search "peking duck beijing" is a cuisine question. The meal people actually sit for is one roast bird. The Ministry of Culture and Tourism's China ICH Digital Museum records roast-duck skill as national item 950, number VIII-167, second batch, 2008, declared from Beijing. That entry is the hung-oven line (gua lu): fruit wood, the bird hung in a purpose-built oven, open flame. A sister ICH record keeps the closed-oven line (men lu) under the same national number: the bird is not shown an open flame. That is a technique lock. It is not a restaurant ranking.

Beijing's own municipal portal still names both ovens. A Capital Window culture note from 4 January 2019 reports Beijing Cuisine Association group standards for traditional hung-oven roast duck and traditional closed-oven roast duck. Both standards require Beijing fill duck (tian ya), 2.5 to 3 kilograms. Hung-oven roast uses fruit wood in a special oven with open flame. Closed-oven roast uses a dedicated oven and flameless premix heat. We will not turn those kitchen minutes into a visitor timetable, and we will not invent a 2026 menu price.

Dongcheng District keeps the hung-oven craft on a public page. The Dongcheng People's Government note on hung-oven roast-duck skill describes a refractory-brick oven with a kiln-shaped mouth and no door, fruit-wood fuel, and a finished bird that should come out date-red, skin crisp, meat tender. The same page records the 2008 national listing. Technique, not a brand review.

You sit to eat one bird. You do not need a coach that sells "Peking duck" as stop four on a hutong walk.

Hung-oven and closed-oven

Official sources distinguish two living ovens. We will not invent a third.

Hung-oven (gua lu) Closed-oven (men lu)
Heat Open flame; fruit wood No open flame; oven-wall heat
Official lock National ICH VIII-167, 2008, hung-oven line National ICH VIII-167, 2008, closed-oven line
Municipal note Fruit wood in a special oven; jujube wood preferred, or apricot, peach, pear Flameless premix heat in a dedicated oven
District note Kiln-mouth oven, no door, fruit-wood splits Closed-oven craft named as the older line on the Dongcheng hung-oven page
What you do Sit. Eat one bird. Sit. Eat one bird.
What it is not A ranked house list A ranked house list

Sources for the table: China ICH hung-oven record; China ICH closed-oven record; Capital Window, Beijing Cuisine Association standards; Dongcheng District hung-oven craft page.

The ICH hung-oven entry names four kitchen stages — scald, blank, roast, carve — and a long chain of smaller steps. The municipal note also names pancake, sweet bean sauce, scallion shreds, and cucumber sticks as the standard sides. That is how you eat it. It is not a tasting-tour talking point.

We will not rank the houses that declared those two ICH lines. Naming a declaring unit is not a booking URL. Pick one room that already roasts. Sit.

How to sit without a food tour

Walk in. If a table is empty, sit. A server will come, or you walk to the counter and point.

Say Peking duck or kao ya. Ask for a whole bird if that is what you came for, not a cold sliced plate from a display window unless that is what you actually want. Pancake, sweet bean sauce, scallion or cucumber. Wrap. Eat. Photograph the carve only if the house allows it. Do not pose over a bird you did not order.

We will not invent English names for every side dish, and we will not invent a 2026 table price. Confirm on the day's menu. Do not count on English on the wall.

Pay by QR. Set up Alipay for foreigners before you want dinner, not when the bird is on the hook. Cash still appears at some older rooms.

This is not a copper-pot night. Sister sit, different cooker: Beijing hot pot 2026. A hutong morning is a walk, on Beijing hutong walk 2026. An opera evening is a stage, on Beijing opera 2026. Do not paste those onto one roast because a brochure used the word culture twice.

Is Peking duck the same as a Beijing food tour?

No. Peking duck is a sit-down: one roast bird, carved, wrapped, eaten. A food tour is a locked walk with a lecture at every door. The national ICH record lists a roast-duck technique, not a tour SKU. Pick one room. Sit.

How do foreigners order Peking duck without speaking Chinese?

Walk in. Sit if a table is empty. Say Peking duck or kao ya. Point at a whole bird. Pancake, sauce, scallion or cucumber. Confirm the day's price on the menu; this page does not invent 2026 prices. Pay by QR. Set up Alipay for foreigners before you want dinner.

Do I need a Beijing food tour to eat roast duck?

No. The meal is a table, not stop four on a hutong walk. Pick one house. Sit. LocalKey does not sell group food tours. Independent or Private Guided can put a table in a Beijing week you already chose. A van that tours kitchens is not what we do.

Is Peking duck a restaurant ranking or an official craft?

It is a technique, not a brand list. The China ICH hung-oven record and the closed-oven record keep two oven lines under national number VIII-167. Beijing's municipal culture note still distinguishes hung-oven fruit wood from closed-oven flameless heat. Dongcheng still publishes the hung-oven craft. We will not review a restaurant.

Can foreigners eat Peking duck in 2026 without speaking Chinese?

Yes. Walk in. Sit if a table is empty. Say kao ya. Point. Do not count on English on the wall. This page does not invent a booking URL.

Do I need a Chinese bank card to pay for roast duck?

No. Pay by QR. Set up Alipay for foreigners before you want dinner, not after the bird is carved. Cash still appears at some older rooms. This page does not invent a 2026 table price.

How this sits in an Independent or Private Guided week

The bird does not need its own coach day. It can sit inside a Beijing week you already chose — an evening after a hutong morning on Beijing hutong walk 2026, or a night after the central-axis day on 5-day Beijing first-time. Keep this as a meal, not a third attraction stacked between the Wall and a silk shop.

If you already have a copper-pot dinner on the same trip, keep them on different nights. The pot is a cooker you work yourself, on Beijing hot pot 2026. The duck is a carved bird. An opera evening is another sit, on Beijing opera 2026.

Two ways to travel, both private. Independent: we book the hotels and trains, you get the LocalKey app roadbook and a 24/7 WhatsApp or WeChat thread, and you can add an airport pickup, a car and driver, or a local guide on the days you want one. You move yourself. Private Guided: the same planning, with private guides, a driver and a car across the trip. A car to a roast-duck room on a tired evening is useful. A van that tours the kitchens is not what we do.

This is the opposite of a group food tour: no locked departure, no lecture at every slice. If the search you typed was a group query, read China group tours or a custom trip and then stay here for a sit-down you can actually keep.

If you want the night booked, not a food tour

LocalKey books customized independent travel. We do not sell group tours. We do not sell a Beijing tasting-menu coach. We do not run food tours.
