Yes. Beijing hot pot is a sit-down: a copper pot (铜锅), a clear broth, thin mutton, and a sesame dip. That is 铜锅涮肉 — copper-pot instant-boiled mutton — not a spicy-south divided pot and not a walking food tour. I am Frank Zhang. I live in Suzhou. The search "beijing hot pot" is usually a cuisine question. The meal people actually sit for is 涮羊肉 in a charcoal or electric copper vessel. Dongcheng District's own page on 东来顺涮羊肉制作技艺 says the old Beijing habit is to cook in a copper hot pot, and that the making skill entered the national intangible-heritage list in 2008. The Ministry of Culture and Tourism's China ICH Digital Museum records the same listing as 牛羊肉烹制技艺(东来顺涮羊肉制作技艺) — item 951, number Ⅷ-168, second national batch, declared from Beijing. That is a technique, not a restaurant ranking. I will not review a brand.
Beijing's own cultural bureau still names the craft. The Beijing Municipal Bureau of Culture and Tourism published the fifth municipal inheritor list on 12 June 2025. Number 109 is Li Shengli, for 北京阳坊传统涮羊肉制作技艺 — Beijing Yangfang traditional instant-boiled mutton — a traditional skill in Changping. Haidian District added 传统涮肉技艺 to its seventh district-level list in July 2026: Haidian People's Government notice. The pot is a living municipal food, not a 2026 invention.
Copper pot is not spicy-south hot pot
Do not paste a Chongqing mala pot onto a Beijing table. The copper pot is a chimney vessel. The broth is light — water, a few jujubes, goji, ginger, sometimes a dried shrimp. The meat is the point. The dip is sesame paste, fermented tofu, chives, coriander. You cook one or two slices at a time. You do not dump a basket and wait.
Sichuan and Chongqing hot pot is oil, chili, and a long boil. That is another meal. If you want a different Chinese sit-down, Cantonese yum cha is tea and dim sum, on Cantonese food experience 2026. Yunnan's cooker is a scalding crossing-bridge bowl, on Yunnan crossing-bridge noodles 2026. Chengdu's public room is a park gaiwan, not a pot, on Chengdu teahouse experience 2026. Do not stack those onto one Beijing night.
The ICH record lists eight traits of the Beijing craft: selected meat, knife work, dip, a strong pot, a fresh base soup, crisp sweet garlic, fine sides, and a full set of extras. I will not pretend I have eaten every house. The official list is enough: meat, pot, dip, sides. That is what you sit for.
How to sit down and order
Walk in. If tables are empty, sit. A server will come, or you walk to the counter and point.
Say 涮羊肉 (shuàn yáng ròu) or 铜锅涮肉 (tóng guō shuàn ròu). Ask for a copper pot, not a spicy divided pot. Point at lamb. If the menu lists cuts — 上脑, 大三叉, 黄瓜条 — pick one or two plates. I will not invent English names for every cut, and I will not invent a 2026 menu price. Confirm on the day.
Then the dip. Sesame paste (芝麻酱) is the Beijing default. Add what you want: fermented tofu, chili oil, chives, coriander, a dash of soy. Sweet pickled garlic (糖蒜) sits on the side. The Dongcheng page names the copper pot and the thin slice you can see the plate through. That is the standard, not a tasting-tour talking point.
Order greens and tofu after the first meat plate, not before. Stay for the second pot of broth if the table offers it. Photograph the steam if you want a picture. Do not pose a copper chimney you did not eat from.
Pay by QR. Set up Alipay for foreigners before you want lunch, not after the pot is lit. Cash still appears at some older rooms. Do not count on English on the wall.
I will not rank a restaurant or invent a booking URL. Those change, and a ranked list turns this back into a tour. Pick one room. Sit. Do not book a hutong food walk that treats the pot as stop four.
