The pot is a municipal listing, not a mall stop
The Chongqing Local Chronicles office page on Chongqing hot pot records 重庆火锅 as a second-batch municipal intangible-heritage item from 2009, and places the living craft in the riverside dock story — shared iron pot, leftover beef offal, chilli and Sichuan pepper for boat workers on the Yangtze and Jialing. That is a technique with a place. It is not a souvenir aisle.
Chongqing's own government keeps the same frame. The Chongqing municipal sixth-batch ICH notice lists 重庆火锅传统制作技艺 with named living lines such as Bajiangjun, Bajiangshui, Lupaibadaotang, and Chaotianmen. The Chongqing municipal seventh-batch ICH notice keeps 重庆火锅传统制作技艺及相关习俗 on the municipal list across Yuzhong, Jiulongpo, Nan'an and other districts.
