Yes. Lanzhou lamian — 兰州拉面, more precisely 兰州牛肉面 — is a sit-down. A bowl of hand-pulled wheat noodles in a clear beef broth, with white radish, red chili oil, green cilantro and garlic sprouts, and yellow noodles. That is the meal. It is not a food-tour SKU, not a group tasting, and not a recipe dump. I am Frank Zhang. I live in Suzhou. This page is how an independent traveler sits for the bowl in Lanzhou.
The craft is a national listing. In 2021 the State Council published the fifth batch of national intangible-heritage items (国发〔2021〕8号). The China Intangible Cultural Heritage Digital Museum records 兰州牛肉面制作技艺 — Lanzhou beef-noodle making — as item Ⅷ-160 on that fifth-batch extension list, declared by Lanzhou, Gansu. The State Council Information Office says the same in English: the craftsmanship was listed as national intangible cultural heritage in 2021. You sit in a shop. You order a bowl. You do not tour the noodle.
How the bowl is built
The ICH page is the official description of the sit-down. Dough is five steps: select the flour, mix, rest, work the strip, then pull. Broth is a long simmer of Gannan yak or yellow beef with a spice pack the listing names — 草果, ginger, Sichuan pepper, nutmeg, clove, pepper, 白芷 — for five to seven hours, until the soup is clear. Then the pour: cooked noodles, clear stock, diced cooked beef, cilantro, garlic sprouts, and a spoon of red chili oil. The lock is five colors: 一清、二白、三红、四绿、五黄.

The search word is 兰州拉面. The official name on the ICH record and on Lanzhou's own standard is 兰州牛肉面 / 兰州牛肉拉面. SAMR's national standards platform lists DB6201/T 003—2024, Management specifications for the use of Lanzhou beef ramen graphic trademarks, filed by the Lanzhou Market Supervision Bureau, issued 29 November 2024 and in force from 1 March 2025. That is the 牛头 graphic mark — a regional public brand — not a restaurant ranking. A shop sign that says 兰州拉面 on a street in another province is a common Chinese lunch. The listing you sit for is the Lanzhou bowl.

How to order without a tour
Walk in. If tables are empty, sit. A server will come, or you walk to the counter and point.
Say 兰州牛肉面 (lán zhōu niú ròu miàn) or 牛肉面. Then a width. 细 and 二细 are the usual ask if you do not already have a preference. The ICH list is enough; I will not invent English names for every extra. If the wall shows chili levels, pick one. If it does not, say 不要辣 or 微辣.
When the bowl lands, eat. Photograph the steam if you want a picture. Do not pose a pull you did not order. Pay by QR. Set up Alipay before you want lunch, not after the soup is on the table. Cash still appears at some older rooms. Do not count on English on the wall.
This is the opposite of a food tour. A walking tasting with a locked departure is a group stop. LocalKey does not sell that.
